Life has been a little busy lately.....2 weekends ago my parents came to visit. We ate lots of good food, went to a cooking class at Sur la Table, watched Arkansas beat Texas A&M, and had lots of fun just hanging out in Dallas. Last weekend was the big Texas vs. OU football game......there was a ton of orange and red around town. <br /></div><div><br /></div><div>Today, I want to let you know about one of the best and probably the most unique restaurants here in Dallas. David and I took my parents there 2 weekends ago. We love this place! <a href="http://risesouffle.com/">Rise No*1</a> is a souffle restaurant located in Inwood Village off Lovers Lane and Inwood. Everything is fabulous and always enough to share. Between David and I, we have probably tried almost everything on the menu. This last visit we ordered the Rise No*1 salad, Southwest Chicken Souffle, Crab Souffle, Brie and Artichoke Souffle, and Pumpkin Souffle for dessert. Everything was so filling and flavorful. So if you are looking for a new place to try in Dallas, I suggest Rise No*1. You will not be disappointed and you might even see Former President and First Lady George and Laura Bush (this is known as their favorite place to eat in Dallas). My passion is cooking.....I love to cook for David, for friends, and for no reason at all. Who knows maybe I will go to culinary school someday. But for now, the skills passed on to me from my grandmothers and mother will have to do. Since it has been a cool 80 degrees in Dallas (it really does feel cool compared to 70+ days in the 100's), I have been craving homemade bread. Last week I made Pumpkin Bread and Zucchini Bread.....David said "they were the best he has ever tasted", and I have to say they were pretty good. I also made a recipe I found in the Williams-Sonoma catalog, and, tonight, I am making Classic Roast Chicken-a recipe I found in The Weeknight Cook cookbook by Williams-Sonoma. Vanilla</span></div><div><span class="Apple-style-span" style="font-size:13px;">2 Cups Flour</span></div><div><span class="Apple-style-span" style="font-size:13px;">1/4 t. baking powder</span></div><div><span class="Apple-style-span" style="font-size:13px;">2 t. baking soda</span></div><div><span class="Apple-style-span" style="font-size:13px;">3 t. cinnamon</span></div><div><span class="Apple-style-span" style="font-size:13px;">1 t. salt</span></div><div><span class="Apple-style-span" style="font-size:13px;">1 Cup nuts, chopped ( I use walnuts)</span></div><div><span class="Apple-style-span" style="font-size:13px;"><br /></span></div><div><span class="Apple-style-span" style="font-size:13px;">*Preheat oven to 350* F. Beat eggs lightly in a large bowl. Stir in oil, sugar, zucchini, and vanilla. Sift Flour, baking powder, baking soda, cinnamon, and salt; stir into egg mixture until well blended. Stir in nuts. Spoon batter into 2 well greased 8x5x3 loaf pans or 4 mini loaf pans. Bake in a 350* oven for 25-30 minutes. (less for mini loaves) Insert a toothpick into the center of the loaf--if it comes out clean remove the pans from the oven. Cool in pans on a wire rack for 10 minutes. AMAZING! We had never been there before, but we had always passed it to go to The Red Bar and Seaside. Multiple people recommended it to us so we decided to try it out! I had the fish of the night which was Kobia in their house Potato Leek Sauce, Stir Fry Veggies and Mac n' Cheese! On Thursday a big group of girls went to Fireside Pies. I had never been before and let's just say that I will probably frequent this place in the future. Last Monday, I had the day off work and my friend Molly had jury duty so we decided to head to the arboretum that afternoon.....it was sunny and in the upper 70's so it was a perfect day to go! The festival lasts until April 11th so if you are in the area be sure to go check it out! Ok, sorry I didn't take any pictures but this is so simple you don't need em....last week I made whole wheat tortellini and doctored up some sauce from a jar....First I sauted 2 cloves of chopped garlic and chopped mushrooms in EVOO....then I added a jar of Bertolli tomato sauce then added kalamata olives, pine nuts, basil, oregano, red pepper flakes, salt and pepper. Meanwhile while that was cooking, I preheated the oven to 425 and tossed some asparagus and cauliflower in EVOO, sprinkled with garlic, oregano, salt and pepper and baked for 15 minutes. I first saw him freshman year at a function called Starbyx. He was the opener for Matt Wertz that night. He has such a great sound and is an amazing piano and guitar player. He often played around Fayetteville and I never missed a concert. He now lives in Nashville, and just released his new Cd "Into the Morning" which you can buy on iTunes and it is WONDERFUL! With all that said, he is touring with Steve Moakler and Andrew Ripp and he came to the House of Blues last Friday......it was a great concert! A few of us that went to the U of A that live in Dallas now, recruited some friends to go as well because we love Ben and they should too! Leading up to today I was beginning to have some negative thoughts since there is not a "significant other" in my life. But then I began to think what this day of love was all about. All that came to mind was this verse: Romans 5:8 "But God demonstrates his own love for us in this: while we were still sinners, Christ died for us." After thinking about this verse, I realized that I needed to think about the greatest love of all and why we are capable to love others! God's love is unconditional and it surpasses all knowledge. We can love others ONLY because God first loved us! In this verse it says "while we were still sinners..."....God didn't send Jesus to die because of anything we did or just because we were good but ONLY because He loved us! Whenever you are uncertain about God's love for you, remember that He loved you even before you turned to Him! How wide, how long, how high, how deep is the love of Christ! Last Thursday it started snowing early in the morning and didn't stop until after midnight! It was so beautiful! I woke up to huge snowflakes coming down! They predicted we would get 1-3 inches, then 4-6 inches but when all was said and done we got 12 inches!!!! Needless to say I was pumped! I love snow! Thursday when I got off work I went to my favorite place in Dallas, Lakeside Drive, and took pictures then later that night my friends Sarah , Hannah , Miranda and I walked around Highland Park in snow and built a snowman! So sorry it has been almost 2 months since my last post! This post is long overdue, but I wanted everyone to know about the best Christmas present I received this year. Let me preface this with saying, Rachael Ray is pretty much my cooking role model! Ever since I was little I have been fascinated with cooking and even pretended that I had my own show on the Food Network. I remember only being able to get the Food Network on vacations so every chance I would get I would be glued to the TV to watch the Essence of Emeril featuring Emeril Lagasse. Now that the Food Network is on my basic cable....I pretty much watch every show they have! In college, my roomates always knew when I had been watching TV if it would be turned to the Food Network! All that to say, sophomore year of college my mom, Lauren and I got to meet Paula Deen! She was so sweet and I was so excited to meet her but a life goal was to meet Rachael Ray! In December I saw that Rachael Ray was going to be at the Borders in Rogers, AR! Seriously! As soon as I move to Dallas she shows up in NWA and of course Dallas was not on her list of places to go! The weekend she was supposed to be there my parents had already planned to come to Dallas to help me set up my apartment so I just accepted the fact that I would have to wait to get one of my cookbooks signed by Rachael. :( Fast forward to Christmas morning.....I open up a present from my Grandparents (who live in Bella Vista) and they had bought me the newest Rachael cookbook! I was so excited to add this to my collection which I started about a year ago! I had almost bought the cookbook myself the week before because I had really wanted it.....then my Grandma tells me to open the book....It had been signed by Rachael herself AND my Grandma even got a picture with Rachael!! At this point I was so excited that tears started rolling down my face because I realized that my Grandparents had gotten up early on a Saturday, waited for hours, just so I could have a signed cookbook by my cooking idol! It was seriously one of the best presents I have ever received! I know my grandparents were surprised by the tears rolling down my face but the hours in line made it all worth it to see that reaction! Needless to say, this present was all I could talk about at Christmas and it will be something that I cherish forever! Sidenote: If anyone is ever stumped on what to get me for birthdays, Christmas, etc. get me a cookbook! I think they are a great present that keeps on giving! (to quote Cousin Eddie). I was very lucky to take off work for a few days so I could spend extra time in NWA! I love Thanksgiving because we always have lots of fun, eat lots of good food, and I get to soak up everything my grandma knows about cooking! Mom and I were actually informed that Thanksgiving is at our house next year so this year we really had to watch the main event of cooking the turkey. My favorite dish of Thanksgiving is Sweet Potato Casserole. We do not just make the basic casserole with marshmallows.....we add brown sugar, pecans, and lots of butter (Paula Deen would be proud)! Needless to stay we were all stuffed but in a very good way! Mom, Dad, and I also started a new tradition this year. We had never gotten up early to experience some Black Friday sales so this year was the year we finally ventured into the madness. We decided since I was needing some cookware for an apartment why not get a deal! It was tons of fun and I think we started a new tradition! This Thanksgiving I think I am especially thankful for my wonderful family! Being away from them is hard but it makes it very special when I get to go home and spend quality time with them. My Mom, Dad, Brother, Sophie, and I spent the day at my Grandparent's house hanging out and eating. We had smoked ribs and pulled pork, which my Granddad woke up at 5 am to put in the smoker, baked beans, coleslaw, watermelon, brownies, and spice cake cupcakes! It was a very yummy day to say the least! I love holidays with my family because they are always filled with good food and lots of stories and laughs! We finished the night with watching fireworks at Arvest Ballpark and when they only lasted 10 minutes we spent the rest of the night driving up and down the highway being "fireworks chasers" and trying to find other fireworks displays across NWA. So in honor of her last episode, Lauren, Ryan, and I grilled out hamburgers and chicken, baked beans, and macaroni and cheese. It was so yummy and the season finale did not disappoint! He graduated with just over 700 people! He is going to the University of Arkansas in August and he is so excited. It will be so great to both be U of A alumni! Yay! I am in the very slow process of finding a job. My two options are Fayetteville or Dallas, so we will see where I end up! Needless to say it went by way too fast and I'm so glad I have lots of pictures to be able to remember it all! It has been a bittersweet weekend filled with happiness and sadness, but I'm looking forward to the next stage of my life and everything God has in store for me!
